2016 Campo Di Sasso Insoglio del Cinghiale (Syrah, Cabernet Franc, Merlot and Petit Verdot)

TASTING NOTES OF 2016 Campo Di Sasso Insoglio del Cinghiale:
- View: intense ruby, hints of purple.
- Nose: Vibrant fruit, cherry, blackberry and floral notes.
- Mouth: full and fruity, soft and balanced tannins.

APPELLATION: Tuscany.
VINES: Tenuta Campo Di Sasso
GRAPES: 31% Cabernet Franc, 32% Merlot, 32% Syrah, 5% Petit Verdot.

AGEING: Aging 40% of the wine for 6 months in French oak barrels of new and second use. Aging of wine 3 months in bottle before release.
PREPARATION: Fermentation for 21 days at 28 °C. 20% malolactic fermentation of wine, partly in oak barrels and the rest in stainless steel.

PAIRING: game meats, pastas and cheeses.
TEMPERATURE: 16-18 °C
ALCOHOL CONTENT: 14%

The best pairing would have been fish. I opened this 2016 with a friend.
Red ruby colour with reddish brown edges. Candy aromas. It felt like the typical astringency from Insoglio del Cinghiale.
