2018 Shaya (Verdejo)
- View: clean and bright straw yellow, greenish reflections.
- Nose: A delicately fruity and floral nose with hints of stone fruit and grapefruit.
- Mouth: great structure and well balanced, mineral notes, memories of marzipan and spices with a refreshing acidity and a long finish with good minerality.
VINEYARD: very sandy soils with lots of rocks eroded by rivers on the surface, which provides a high degree of complexity to this wine
PREPARATION: vinification stainless steel tanks for 25 days with a maximum temperature of 15 °C. After the completed fermentation process remains in refrigerated storage until bottling. A small percentage (20-30%) was fermented in 500 to 600 liters.
PAIRING: cooked seafood, shellfish, white fish, light pasta, salads, seamanship sauces, baked blue fish, smoked sausages, white meat, semi-hard cheeses, creams.
RIGHT SERVING TEMPERATURE: 8-10 °C
