2014 Allende Blanco (Malvasía and Viura)
TASTING NOTES Allende Blanco 2014 :
- View: bright yellow, golden reflections.
- Nose: subtle aromas, citrus notes of peach, loquat, greengage, some balsamic and a touch of herbs.
- Mouth: light and soft, slightly creamy, smooth body, notions of ripe yellow fruit, well integrated wood notes, hints of herbes de Provence, a hint of tropical fruit and mineral nuances. long fruity finish.
AGEING: Fourteen months in French oak Bordeaux barrels. The first seven months with lees, making battonage twice a week. Racking back seven months without lees.
PROCESSING: soft pressing of the grapes in vertical press. Static racking must flower for 48 hours. Fermentation in new French oak barrels for 28 days at 20 °C.
GRAPES: Viura and Malvasia.
PAIRING: soupy rice, raw seafood, seafood stew, grilled seafood, cod, Iberian ham, oysters.
TEMPERATURE: 10 °C
ALCOHOL CONTENT: 13.5%
