“The year 2015 was a good year for the AIX (en provence rose in general). and nature showed itself from its best side. A mild spring and soft, not too hot but sunny summer and mild autumn created the perfect conditions for the grapes to develop the perfect harmony of acids and phenolic ripeness and two weeks earlier than could already be harvested in 2014. So picking began on September 7, morning at 4am. Once in the cellar, the wine was fermented slowly at exceptionally low temperature of only about 12 degrees Celsius. The hard work of constant attention of the AIX team in the vineyards was rewarded with a maximum harvest in perfect health. This allows the AIX Rosé 2015 is a memorable year which certainly goes into the book. All the factors together gave a fine 2015, pale orange, frissig, juicy and fruity (o. A.
