2017 Jean Paul et Benoit Droin Chablis 1er Cru Montmains
- View: pretty intense greenish yellow.
- Nose: delicate nose, subtle floral and mineral notes, green apple, lemon, acacia, wood, anise, flint and mushrooms.
- Boca: a freshness, large, medium body and persistent.
APPELLATION: Chablis 1er Cru.
VINES: Terroir: soil marked by a relatively low slope, allowing Kimmeridgian marl sometimes massive maintained.
PREPARATION: pneumatic pressing. Enzymatic placing 12 to 24 days at 15 °C, after fermentation yeasts partly in stainless steel tanks and partly in barrels. systematically making malolactic fermentation after assembly after 8 to 10 months. Collage if necessary, light filtration and bottling.
PAIRING: shrimp skewers with citrus, chive sauce, bagel with smoked salmon, apple and two cheeses, skewered shrimp and scallops with citrus, avocado stuffed with shrimp north.
